Family Travel Maintenance Checks Over The Festive Season



Planning on travelling over the festive season? There are quite a few things you are going to need and to check out before you hit the open road to keep the family safe and the kids entertained and occupied. 

Whilst over the last year we’ve not been big travellers, I’ve travelled with Leanora enough to know what I need to travel with to have a safe and easy journey being a short or long-haul travel journey, as they say, you live and you learn!

We recently visited family in Northampton and before we sped off down the open road, We made sure to take our safety measures, especially as our car is not new and well over 3 years old and was in need of an MOT so glad that Calmac Tyres was able to help, they checked the brake pads which I was grateful as they were a little worn and replaced them immediately. One must be aware of the brakes functioning properly, negligence to this may lead to devastating consequences and may cause inconvenience along the journey. They also topped up and made sure that the fluid levels are appropriate. Since I travelled with my kid I did not want to go through the hassle of stopping at service stations, I just wanted to get home as quickly and safely as possible, so prior to our trip we made sure to fill up our engine to the required oil levels. I cannot recommend enough visiting Calmac Tyres for all your car servicing needs, you can even book your car in online on their website free of cost.

Games
Be it if you are in the car or on a plane, games are essential to have in your travel e bag to keep the kids and you entertained, mostly you sane from the kids kicking off and complaining every five minutes. Whilst I eye spy is a great game for the family, it can easily become boring, so stock up on cards, activity books and colours.

Translator
We are off to Paris for New Years, now whilst I may have learnt French at school, I literally know the bare minimum. Google Translate is my new best friend and is great to have at hand especially if sightseeing and you get. Little lost or if your child has allergies and need to let the hotel or restaurant know.

IPad
I cannot lie we always take ours when travelling and it goes without saying, bring the IPad I know I will be! Make sure it’s fully charged and even bring a travel battery charger so if the battery is running low whop out the extension lead to keep it going, perfect for long haul flights and drives.

First Aid Kit
It goes without saying, this is a must, you don’t have t9 bring a massive one, but even if you pack a vanity bag with essentials such as plasters, antibacterial wipes and normal wipes, goes without saying!

Always insure before setting off particularly if driving that your lights are fully working on your vehicle along with all fluids are topped up including fuel, coolant, brake fluid and oil, this is so important and doing these little checks can save you a lot in the long run, no one wants to break down on the motorway ever and keeping your car MOT tested regularly will help you and your family.

Humble Chicken Pot Pie




One of the many things I love about the cold is the cosy dishes I get to make, but eat! We are big fans for years of pie, but I’ve never made my own until now and this chicken pot pie is delicious, full of flavour and our new and hopefully your new favourite, plus it makes your home smell divine.

Monday’s are normally leftover day's, we make a roast chicken on a Sunday and then the chicken left over normally goes into a stir fry for dinner or used for our lunch in sandwiches, but this Monday we will be having it in a pie loaded with vegetables, fresh herbs and tender chicken bursting with flavour and truly scrumptious. 

This buttery rich humble pie is perfect for the family weeknight dinner and takes no time at all to make. 

INGREDIENTS
  • Leftover chicken shredded 
  • 2 carrots diced
  • 1 onion chopped finely
  • 1 cup of petit pots
  • 1 clove of crushed garlic
  • 2 leeks chopped
  • 2 tbsp olive oil
  • 1 knob of salted butter
  • 50g of plain flour
  • 600ml of vegetable stock (or chicken)
  • 1/2 a bunch of fresh thyme
  • 1 medium egg beaten
  • 1 sheet of chilled puff pastry



DIRECTIONS
  1. Preheat oven to 180C/350F/Gas Mark 4
  2. In a large frying pan, add the olive oil, diced carrots, leeks, onion, garlic and half of your thyme and cook until soft, stirring often. Cook for about 10 minutes until golden.
  3. Next, add in the chicken, butter, flour and stock into the pan then stir until melted and all comes together then add the remaining herbs and cook for a further 10 minutes, stirring occasionally.
  4. Pour your filling into your pie dish and take your pastry and place it over the pie. Take a sharp knife and trim the edges, make sure to leave about 1cm over the dish and press slightly so that it sticks, then pinch with your fingers or take a fork and push down around the sides.
  5. Egg wash your pastry and then bake in the oven until pie lid is golden, then serve with some steamed seasonal vegetables. 

Nothing too hard to make, a simple and delicious humble pie.

Mushroom And Lentil Bolognese


Cosy and comforting, mushroom and lentils make for a simple supper the whole family will love! We've been cutting down on our meat intake and we have felt great and found we've had more energy, thanks to this hearty meal, with fresh herbs, loads of veggies and of course lashings of melty cheese and pasta. 

With the holidays finally here, we all tend to eat a lot more and indulge, and I'll be the first to admit that I indulge big time, so it is nice to have something healthier and with the cold weather a hearty meal with pasta is the way to go. I am a big fan of pasta, but I've noticed that as soon as I have been eating it of late, I've been left feeling bloated and very uncomfortable, so I decided to try gluten free pasta and oh my gosh, it has been totally life-changing, the bloat has gone and I feel great after eating it! I may have been a bit naughty and had seconds, ok maybe a cheeky third's, but I have to say gluten-free is the way for me and my family and for those that feel bloated after eating a starch pasta dish, I recommend trying gluten-free pasta. 


Leanora loves bolognese, so at first, I was a little worried about this dish but it was a hit and she did not even notice that it was jam-packed with vegetables, especially vegetables that she normally does not eat (mushrooms), she scoffed the whole lot and asked for another helping. This is the perfect cosy and hearty vegetable filled dish for the family, a smashing way to sneak in the 5 a day for the kids, plus it's a great way to get them to try new things such as lentils. 

Growing up and now in my adult life, I never tried lentils so was a little bit worried about cooking them, even myself liking them, most likely due to fear of the unknown, but that is what is great about stepping out of your comfort zone and taking a risk and trying new things as it can pay off and it sure did. 


I always thought you had to soak lentils, like some pulses you have to, but it is so easy to cook and popped it all into the same pot to cook out. I went for green lentils for this dish as I found that they have a more earthy stronger flavour and remain firm once cooked, therefore giving this dish a more meatier texture.


INGREDIENTS
  • 2 carrot
  • 1 onion
  • 2 cloves of garlic
  • 2 sticks of celery
  • 1/2 a bunch of fresh time
  • 250g chestnut mushrooms
  • olive oil
  • 100g of green lentils
  • 2 tbsp of tomato puree
  • 1 tin of plum tomatoes
  • 400ml vegetable stock
  • parmesan cheese
  • 400g of gluten-free pasta 



DIRECTIONS
  1. Peel the onion, carrot and garlic. Trim the celery and roughly chop all veg. Heat up the oil in a large frying pan. Add all the vegetables, along with the time and cook for 10-15 minutes until soft. 
  2. Blitz the mushrooms in a food processor or roughly chop into small pieces, add to the pan and cook for 2 minutes, stir and add the green lentils, tomato puree, plum tomatoes, and vegetable stock and pop on a lid and cook on a medium heat for 30 minutes until lentils are tender, stirring occasionally. 
  3. When the lentils are almost done cook pasta as per instructions on the packet.
  4. Drain the pasta once cooked, saving a little of the water it was cooked in, into a cup.
  5. Stir in the bolognese into the pasta and a little of the hotter saved in the cup to help it to stop sticking together. Sprinkle in the parmesan and if you like roughly chop some parsley and serve it on top of your bolognese.

This bolognese can be stored in an airtight container in the fridge for up to a week or in the freezer for up to a month.

Best Scented Candles For Autumn



There are certain things that I can not live without and one of those things is candles. I just love that when you walk into a room, the smell is just uplifting and cosy and makes you never want to leave.  Every mantle space, nook and cranny in my home you will find a candle, kept out of reach of Leanora of course.

I love finding new brands and scents and you do not have to spend a bomb on finding delicious good long-lasting scented candles, for decoration I head to Ikea I literally fill my bag with them, TK Maxx for the more unusual and Space NK or Selfridges for a bit of luxury. 



Each season I change my scents and with Christmas only 4 weeks away, I look for more bolder, cosier, woodsier and festive scents to get me in the festive and winter mood. 

Arket, my new fave store where you can grab clothes for the family, coffee and cake as well as items for the home, sell a Geranium scented candle it is inviting and fills the room all whilst not being overpowering at the same time. I love burning this after a long day and putting my feet up on the sofa, helping me unwind and relax of an evening, brilliant for de-stressing in the bath to end your day.


H&M can never do any wrong in my eyes, whilst the more affordable priced candles scents do not last as long, they too are great for decorative purposes, they have a new still affordable but a little more pricer premium candle range and this cotton candle, which has a burn time of up to 50 hours is great for burning first thing of a morning, its light and fresh and you will most likely find this candle in my kitchen as that is pretty much were I spend most of my time in the morning and can easily go through quite a few of these.

Tips On Switching Off


The past few weeks have been a total madness, from changing a new job to starting one, to keeping up with my 4 year old 's social life and Christmas school play, from managing the house and everything in between and waking up in the middle of the night, thinking of what needs to be done tomorrow, it can be hard to switch off!

Last week, I did just that, I had to find that nice slow groove and slow down, for my own piece of mind and to recharge and take care of myself. Whilst I love what I do and enjoy being busy, I am  forever grateful, but at times we just need to take it easy, after all there is only one of me and one of you, this does not have to be taking time off, for days on end, even the smallest of things and setting time aside can help. 

Monday Cook-Off
I can normally get home at 10 - 11 pm of a night from work, whilst being out the house for 15 hours is not ideal, it happens and I come home grab a quick bite to eat, before hitting the bed, but last week I changed that I took a little time to get out earlier and get home and spend time with my family I even managed to cook and I loved it, I felt so much more relaxed, just because it is the first day of the week, does not mean I have to smash it from the get-go. 

Whilst this may not seem like self-care, it truly felt it. I felt more invigorated just spending time with family and cooking, even though the kitchen was left looking like a war zone, the mushroom and lentil bolognese was a hit, Leanora and I sat on the kitchen floor and ate it, giggling about our day whilst enjoying our meal surrounded by pasta on the walls. 

Read It
So you know I am a major fan of books, I actually have not read anything new for a little while, because I've been so busy. But I treated myself for my Birthday and started Michelle Obama's, Becoming and it is amazing, but I'll fill you in more later in the week when I finally bring out my latest book club reads. 

Armed with a book, on route to work and a little reading before bed, is just so relaxing. It is about finding that balance to break away from work and the constant go of life, to help you switch off, be it even watching a movie or a fave tv show, we are currently loving Dynasties documentary on a Sunday.

Midweek pamper
Nothing like switching off, then a little beauty self-care, that midweek pick me up and a little indulgence to help you feel better and relaxed is perfect. With Christmas fast approaching I wanted to save some money, so I bought some beauty bits from Feelunique and had an at home pampering session. 

After a long hot soak, a bath filled with essential bath oils, some candles burning, my new fave podcast on in the background and freshly polished nails., by the time I got into bed, tucked up with a book, I felt less stressed, re-energised and mentally renewed. My body and my find felt great immediately leading me to have better and non broken sleep. I totally recommend taking time out with a pamper night at least once a week as a must. 

Stretch it out
I have to confess I always try to find a million excuses to not go or work out at home, it is too cold, it's too dark, I've not slept enough, I got too much work to do, the gym is going to be busy I won't be able to get a slot avail;able for a class, you can see where I am going with this right!

So last week, I made sure to get in at least two works in the morning, if I can not attend a class, I got up 30 minutes earlier, rolled out my mat and stretched it out. I felt leaner after yoga and stronger after a 30-minute pilates session and you can instantly feel the benefits in your mind, body, and soul. I learned the importance after a work out on taking care of one's self, I felt ready for my day and able to tackle whatever comes my way and charged with life and positivity and anything negative I may have been thinking or holding on to, simply went away. 

It is about doing small things to help you switch off, feel rested and energised to be able to manage your days and weeks. Instead of doing all of this on a Sunday to prep me for the week, it's about doing a little each day.

What To Buy This Black Friday


I have to admit, I have been holding out on my Christmas shopping to grab some bargains and big savings for the Black Friday Sale and it is finally here upon us and I am super excited. Something about knowing that I've made a saving just make me happy, especially as we are in the festive period and there is so much to see and do throughout this next few months, plus Winter Wonderland officially opens today so I know Leanora will be wanting to go on a weekly basis. 

I always start with the electronics as this is where most of my money goes, plus is this not where the Black Friday sales started with? Do you remember the carnage caused at Asda where a massive stampede happened all to swipe a TV! Yup, I do and I do not intend on venturing to any store, that is why it is key to have your list and wishlist items saved and enjoy the sales from the comfort of your own home (or office desk!). Leanora for Christmas wants a Nintendo Switch so I'll be keeping my eyes peeled for that I also know that Amazon are having huge sales on there video games too, unto 40% off. For me, I am planning finally to start blogging next year, so I've been looking at ring lights, along with toying with the idea of upgrading my MacBook and there is no better time to bag one in one of the biggest sales. 


Electricals



I am currently in the process of redecorating the house, I've got all the big things, such as a bed and sofa, but it's just the smaller things to bring it all together, such as cushions, lamps and other bits to help decorate the home and make it more festive for Christmas. I've also been eyeing up a new little chair of the bedroom and footstool as well as new coffee machine. The idea is to think about what you want, otherwise, if I did not I'll just simply splash the cash and most likely end up with items that I do not want and do not fit with my home or style, so a little forward planning is essential.

Ok, so we all need a little treat and what better time to spoil yourself in a justifiable way when saving money. I've been eyeing up these amazing Veja trainers for Leanora and myself and with the temperature drop, some new oversize knits and cardigans for us too, along with some new denim, you can never have too many pairs of jeans right! I like to take my time on getting the perfect items, for Pete's sake it took me 3 years to find my mirror for the living room, but the moment I saw it no matter how long it took I knew it was the one and Constance had to be mine.
