Chia Seed Breakfast Pudding


I've never been a breakfast person and if I do eat breakfast, it is normally a bacon or sausage sandwich or anything that I can grab and have on the go.

Now that the weather is changing I want to eat healthier and I have changed my mindset and know that the best way to start my day is by having breakfast, good breakfast at that!

I know, I know I am so late in the game of the chia seed breakfast puddings, but better late than never right.

My mornings start early, normally between 5:30-6:30am depending on Leanora.

I want to eat something that is A tasty B good for you C something that packs a punch and can hold me until lunch or my normal 11s's (that's grammatically correct right?!) which are normally these beauties Gluten-Free Oat Bars which I posted the recipe last week.

What I love about these Chia Seed breakfast puddings, is that you don't necessarily have to have them for breakfast a treat is fine also, plus they take no time to whip up and can even make from the night before.

Serves 1
Ingredients

Chia seeds 40 grams
Almond, coconut or vanilla soya milk 200 ml
Vanilla extract if you do not use vanilla soya milk
4 - 5 Strawberries
Sunflower seeds

Instructions

1. Mix Chia Seeds, Almond Milk and add a drop of vanilla extract, together in your mason jar or container that you are using and place in the fridge to set overnight.

2. Remove from fridge, make sure that your pudding has set, garnish with your fruit and nuts and devour.
