Rich slow cooked steak pie, nothing better on a cold night when you need a little comfort. Pie is the best form of comfort food hands down, it’s melt in the mouth good and hearty for the soul.

When handled with love it’s pure bliss. I’ve only recently started making my own, my first go of it was with my humble chicken pot pie and since then I’ve not looked back and never bought a ready made shop one.



Only a few ingredients are needed to make his slow cooked steak pie and with the kids on half term, there couldn’t be a better time to make this feel good pie.


After a wet weekend we will be venturing out the house today finally, off to the movies to watch Sonic. So I know with today looking the same as this weekend I’m looking forward to coming back home to this delicious pie. Thinking ahead and trying to be organised this week I’m making this hearty pie now before we set off for our day, saving my time by doing all he hard work now, so when we get home, simply got to re-heat and cook some veggies, giving me a lot more time to put my feet up and relax and spend a bit more time with L.



What I love is he fact that you can tweak this recipe, even get creative and vegetables to it, or for something more robust I would even recommend putting in some potatoes, but I like all of mine on the side, give me all the mash and green beans on the side please.



Let’s get to it shall, after all we’ve a busy day ahead to let’s get cooking.

Ingredients 


1kg diced braising steak
1 large onion diced
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water 
1 sheet of ready-rolled puff pastry
1 egg yolk, beaten


Directions

  1. Pre heat the oven to 220C/200C fan/gas 7. Heat half the oil in a large pot over a medium heat, brown the meat in batches, then set aside. Add the onions a drizzle of more oil, then cook on a low heat for 5 mins until coloured. Scatter over the flour, stirring until the flour turns brown and comes together with the onions. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. 
  2. Pour over the stock, and bring to a simmer. Pour the filling into a pie dish place in the oven for about 2 hrs, until the meat is tender. 
  3. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish.
  4. Brush the pie with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few mins before serving.

This wild mushroom with thyme pizza is flavoursome and pure perfection! It’s not your traditional red sauce pizza, oh no, it’s a lot more special than that! Here it’s covered with a tasty bechamel sauce, it is super quick to make, perfect for those days when you get home late and assembled with one of our top veggies, plus costs next to nothing to make!!

When it comes to pizza night, we like to keep things simple and make it easy for ourselves so pizza base is always bought, in fairness I’ve never made a pizza base from scratch, but I rather keep things simple for myself, plus when we make pizza at home we always get a gluten-free base, as I’m sure I have an intolerance to it.


We went for Wild Mushrooms for our pizza, a great selection from all over the world, plus I added a few chestnut ones in too for that extra nuttiness, with fresh thyme. 

Now, if you don’t know, we have an obsession with mushrooms in this house, if we could have them every day it certainly wouldn’t be an issue, one of our favourite ways to have them is roasted with polenta, another great rich and hearty weeknight meal for these dark nights we are having. Another great recipe which always goes down well with the kids  is my mushroom and lentil Bolognese, always a hit, trust me and they don’t even miss or ask for meat.


Ingredients 
* 3tbs unsalted butter
* 3tbs all-purpose flour
* 1 cup (260ml of milk)
* 1 Tbs. chopped fresh oregano
* Salt 
* freshly ground pepper
* 250 grams of mixed wild mushrooms, such as chanterelles, shiitakes or oyster and chestnut mushrooms, trimmed and sliced 
* A few springs of fresh thyme, chopped 

Directions
1. Kicking off, pre heat your oven to 210c
2. In a small saucepan set over a medium heat, you are going to make your bĂ©chamel sauce. Melt your butter, then whisk in your flour add in your milk, oregano a pinch of salt and pepper and keep on whisking to make your sauce, when it covers the back of your spoon you know it’s done
3. Spread over your sauce on to your pizza base and a sprinkle over your chopped mushrooms and thyme
4. Place in the over for 10-12 minutes or until your pizza is crispy and golden 

Serve with salad, crisp white wine for you juice for the kids and thank me later.

Don’t you just wish every night was pizza night!? If you fancy a meat pizza, then i highly recommend you try my fig, mozzarella and prosciutto pizza, say goodbye to Domino's.

I am not really a dessert person, but every now and again I do like a sweet treat, I am currently eating one as I write about it! Nothing feels better than a little indulgence, especially one that has the warming taste of pumpkin, besides just look at these pumpkin spice rolls, they are the ultimate Autumnal treat.

With Autumn firmly here and the leaves turning beautiful shades of brown and red I am always searching for a little snack that is a little bit naughty and comforting, to enjoy no matter the time of day. 

This recipe is super easy and takes no time at all to make and whip up, similar to my pumpkin spice biscuits. With the kids half term fast approaching these would be great to make with them or for them and taken out for any of your days out planned, or if no kids, then they will totally score you brownie points with your colleagues at work.


Once your rolls are cooked, the house smells truly divine, like a little bakery nestled in your abode, plus these will have you feeling like a true domestic goddess, well to your kids and friends anyways, that is if you plan on sharing these. 

What is great about these pastry rolls, they are perfect for breakfast, or a treat throughout the day and can be eaten cold or warm, so great to pack in a lunch box and gobbled at your desk. 

These pastry rolls are rich but not overly sweet and the warm pumpkin spices, make you just want to curl up with a cuppa and leave you feeling super cosy.


Ingredients
2 pack of ready made puff pastry
50g of butter (room temperature)
50g muscavado sugar
2 tbsp of pumpkin spice mix (or cinnamon)
1 egg (beaten)

Directions
1. preheat your oven to 180°c  and grease your 8inch round 2tin lightly. 

2. Mix together your softened butter, sugar and spice mix until all comes together.

3. lightly dust your surface with flour then roll out your ready made puff pastry, then spread over your pumpkin spice filling all over the pastry leaving a 1cm gap at the edges.

4. Roll your puff pastry gently into a roll, then cut into sections about 2cm thick and place into your tin until filled, leave a little space between each as they will expand when cooking. 

5. Take the beaten egg and give them a light brush and place in the oven for 2-30 mins, or until golden brown on the top, then leave to cool for 15-20 minutes, if not devour immediately, great served hot with a cuppa.

A simple dish to share with loved ones, they know how you roll.

Can you believe that A, it is nearly the weekend and B, it is September already! I mean yay to the weekend and Nay to the fact that the year has totally flown by, I mean, was it not just Easter the other day!

As we are moving off slightly from a midsummer nights dream, in a way which I am not quite ready to let go of, but life goes on, plus I will be braving the new Autumn air with my legs out, but don't worry how cold it has been the past few days (early morning and night) I am sure it won't be for very much longer.

Red-burgundy
No, I don't mean Ron Burgundy from Anchor Man I do mean the colours, Red & Burgundy. Red is this seasons must have colour, but I like to ease into that pop of red and start with a nice burgundy, the perfect offset of between the two and delightful warm shades of red and brown, personally I think it is a shade that goes with all skin types.





Shearling jacket
I mean what is not to love, it is always a big hit and I only got involved once last year, but I got my eye on a few shearling/teddy goodies to ease myself into the colder season. 





Anything Weekday

The amazing brand is totally having a moment, especially with the new store opening on Regent Street, which FYI I am heading to, kid free over the weekend to stock up on so much needed essentials! Well, that's a laugh I want it all, plus I spied online that they are currently having 20% off ALL JEANS! Yup you heard me all jeans guys!

You know I am totally having a sweater moment, it's a massive game changer right now, be it paired with a skirt, backless with some comfy jeans or just something to lounge around in the house in, whatever! Make it a must this pay day and peruse this vast list I created for you guys to check out and snap a few of your favourites too.





Biggin it up
Quite literally go big or go home, and seeing as I'm on the tube with two bags, I'm just gonna go home, jump on the laptop and search for a big bag! This seasons trend is a must have big bag and I'm totally all over this trend, not just because I've spotted a few good ones but, it enables me to carry everything and anything, i.e. I could probably throw Leanora in their, so miss 1 mile per hour walking tortoise can get somewhere! 

Book
Before I had L, I was a major reader and I am currently on a hunt for a few good books, be it self-help, fiction or not I plan on delving and getting lost in a few this month, so any suggestions would be greatly appreciated. 

Mirror 
Ok, so I have been living in my home for like 2 years and I am yet to find a mirror to go in the living room! I am a woman on a mission this month and I need some help in finding a large mirror, be it silver, grey or white I need something big! Every time I find something that I love it sells out, so guys yet again help me out, know of any good stores or markets, wherever just help a Mumma out with some suggestions!

Movie
Yes this has totally made the cut and I am a major fan of the original and I know that sometimes remakes can be atrocious, but I am dying to see IT yes IT I remember watching it as a kid and it scared the crap outta me literally my skin ran off and left me looking like a ghost! Damn, I love a scary movie, truly nothing makes me happier than a movie scaring me shitless and IT gets me excited, plus hottie Alexander SkarsgÄrd younger brother is in it, playing the main role, sooooo a total must see, even just to perv over him!
