Pesto is our go to hero condiment, all throughout the year and I can not believe I use to buy this super easy, super tasty and all round awesome sauce when it is so easy to make. 

Every week without fail I have to make a batch of this glorious green sauce, those days not wanting to be in the kitchen and make a grand dinner after a long day at work and want something fresh, tasty and super easy to make, bomb, pop this bad boy at of the fridge, boil up some pasta combine the two great gods together and a sprinkle, well who am I kidding a lovely and very generous sprinkle of parmesan and the family dish just comes together in the most perfect way. 

This pesto works great in salads and sarnies too.


To start making this heavenly sauce, you got to toast up a cup full pine nuts until nice and brown, then toss into my blender.

I like to add 1 cup of olive oil.

Followed by  2 cup fulls of basil.

4 cloves of garlic

Juice of half a lemon

1 cup of grated parmesan, do not buy already grated parmesan the taste is completely different.

A pinch of salt and pepper, then give it all a whizz in your blender.

If you find that it is too thick a splash of water will loosen things up for you.

There is nothing more delicious than enjoying this, with family and friends and you know what the pesto's yet to come.

With busy days and always in a hurry it is easier to just pick up something unhealthy filled with bad sugars. But with this super tasty and healthy breakfast smoothie jampacked with nuts, fruit, dairy or not, a smoothie is a great way to start the day and help keeps you fuelled  all the way up to lunch.


This super easy super quick strawberry and vanilla breakfast smoothie takes no time at all, a quick whizz in my snazzy new Blendtec blender or any other good strong blender that you may have, it can be done in less than five minutes and in your stomach within three, so no excuse to not have best breakfast to start your day and can even be done whilst you're in the shower getting ready, putting I load of washing in, or quick zip around with the hoover, so there is no excuse not to make the super tasty dish.

Ingredients
1 cup of frozen strawberries
1 cup of vanilla yoghurt/plain or vanilla non-dairy yoghurt
1 tbsp of maple syrup
1 1/4 tsp vanilla

Toppings
Sunflower seeds
Chia seeds
Cornflakes

Directions
1. Add all of your ingredients into your blender and blend until smooth

2. Pour your blended smoothie into a bowl, and sprinkle your sunflower seeds, chia seeds, and cornflakes.

3. Tuck in!

Super easy and super quick and extremely tasty breakfast to start your day, perfect not just for you but family and friends too.

With school uniforms, lunches, stationary to buy you want to make sure you watch the pennies and the pounds will take care of themselves, so my dear old Ma says. For me what I like to do is use my club card rewards points to go towards Leanora's nursery clothes, so each new term all the points that I have collected and saved in Sainsbury's will go to some much-needed essentials, which consists of mostly socks and underwear. With a few additional points left over, I decided to buy a few tasty treats and make these tasty Yoghurt lollipops. A great way on scoring more points and some that they do not tell you about in store, is by checking Sainsbury's Nectar card app, a few weeks ago I managed scoring extra points, just by logging back into the app.

So quick and super easy to make only a few essentials needed and perfect for the whole family before and after school. 

Ingredients
Yoghurt - Any flavour of your choice
Blueberries
Granola

Method
1. Pour in half of your yoghurt into your lollipop moulds, drop a few blueberries a sprinkle of granola and repeat until filled to the top then freeze.

That is it, how quick and simple is that, little fuss, little mess, just what Mumma needed and the kitchen too. By making your own yoghurt lollipops, you will be saving your self a whole lotta dosh, plus you know what is actually going into it.

There is something satisfying, about biting down into a packed filo pastry finger fillers with spinach and splendour of warm feta cheese.

Be it you are looking for a warm treat to start the day, a little snack throughout the day or a new addition to your meat free Monday dish, these spinach and feta fingers well truly keep you satisfied.

Not one for wanting to slave over cooking for hours on end, I mean no one wants too, these delights take no time at all to make.

Ingredients
2tbsp olive oil
1 onion slices finely
1 clove of garlic cut finely
2 tsp of dried oregano
350 grams of spinach, washed
100 grams of feta, crumbled
1 egg whisked
1 pack of filo pastry sheets
Sesame seeds for garnish

Directions
1. Heat up your frying pan over a medium heat and add your oil. Turn on the oven to 180c, gas mark 4. Chop your onions and garlic finely along with two pinches of your oregano add all to pan and cook until onion and garlic becomes soft. 

2. Whack in your spinach into the pan and cook until wilted, pop to one side to cool.

3. Cut your filo pastry in to triangles (you will need two sheets per filo finger). brush the pastry with the whisked egg and add to each a table or two of your spinach and feta filling and roll and repeat. Once done brush the top of the rolls with the remaining egg wash and then sprinkle with sesame seeds.

4. Pop your Spinach and Feta Rolls in the oven for 20 mins until golden and crispy placed in the middle shelf.

Last night I whipped up a delicious batch of Easy Sweet Mummy Chicken Fajitas, minimal amount of cooking which meant more time being spent with family and friends.

At least once throughout the week I'll cook a whole chicken and I get creative with the leftovers.  Last night's creativity turned in to an easy peasy Sweet Mummy Chicken Fajitas. 

Not really wanting to slave over the stove, I did and no shame in it, bought most of the ingredients ready made, but we are all allowed a cheat day right and what better way to have a cheat day than with these tasty Fajitas. 

Ingredients serves 2

Half a cooked chicken 
1 packet of flour tortilla wraps
1 tub of sour cream and chives
1 packet of grated mozzarella (250g)
Jalapeno Peppers sliced
Half an Iceberg lettuce
1 tub of salsa
1 tub of smashed avocado
1 lime
pack of fajita spice mix
2 tbsp of olive oil

Instructions

1. Pre heat oven to 190C/375F/Gas 5. Shred the remainder chicken from the bone and place in to a bowl. Heat up a frying pay and add 2 tbsp of olive oil, once nice and hot place your threaded chicken inside to heat up and sprinkle half the fajita mix on top. 

2. Take 4 to 6 of your tortillas and heat up in the oven. Chop half of your iceberg lettuce and put on a large sharing board, followed by your, salsa, smashed avocado and sour cream and chive and a few handfuls of your grated mozzarella cheese. 

3. Squeeze half a lime over your now heated chicken and turn off the hob and oven add to your sharing board, both the chicken and your wraps. 

4. Bring to the table and enjoy your Sweet Mummy Chicken Fajitas. You can see I did not plate up my Jalapeños as I was eating with Leanora, so popped some in mine for that extra heat.

How delicious are they, they are called Sweet Chicken Fajitas, as Leanora took a bite and said 'Sweet Mummy' Chicken Fajitas.

First thing is first, you need to understand I am not a cake maker, bread maker of candlestick maker, but by Pete's sake I'm gonna give it a go and whip up something fantastic, with my little helper in tow, clean hands at the ready, we said a little prayer as we probably will destroy the kitchen in the process.

Kitchen survived, no smoke alarms gone off and all went swimmingly and the end result shocked me, that it actually came out just as I hoped if not better.

I am not fan of bananas, something about the texture puts me off, but Leanora loves them so I do not mind buying them. 

A few left over and a tad overripe, mother and daughter in search for an activity on this rainy day, why not make a 
cake to cheer us up from the weather plus it would be fun.

This is the recipe below, why not give it a go.

Ingredients For The Banana and Walnut Cake 
3 medium bananas 
300 g self-raising flour
150 g softened butter 
150 g soft brown sugar 
2 medium eggs 
75g walnuts 
2 tablespoons vegetable oil

For The Cake Topping 
125 g full fat soft cheese 
75 g butter
200 g icing sugar
Teaspoon vanilla essence
Squeeze of lemon juice to taste
5-10g walnuts

1. Preheat oven to 180°C / 350°F / Gas Mark 4.
2. Grease the loaf tin (23cm) with butter
3. Peel the bananas and mash them with a fork and bag the walnuts with a rolling pin in a bag, not to finely as you want a mixture of size
4. Place the butter and brown sugar into a mixing bowl and blend together with a fork. Stir in the bananas and chopped walnuts. Mix in one egg and sift in half of the flour. Add the remaining flour, egg, oil then mix in a figure of eight, but Leanora did not understand so mixed like a mad woman/toddler
5. Pour the mixture into the loaf tin, smooth it level and place in the oven for 50-60 minutes. 
6. Make the topping by adding the icing sugar, soft cheese, butter and vanilla into a bowl and mixing it all together with a fork. Spoon the icing onto the cake and spread it evenly with a knife and sprinkle the remainder of your walnuts on top

A sweet treat to enjoy any day of the week, with a cup of coffee for me, warm milk for Leanora, feet up, blankets at the ready and time to chill and watch a movie.
