Spring Tart

Spring is in the air and humid nights are here and what better way to enjoy it, than tucking into a delightful something fresh and wild. 

No one fancies slaving away over a hot stove in these humid days, especially me I rather spend that time having fun with Leanora. 

I wanted something tasty, fresh and little healthy, but quick to make and something that can be packed up and taken out for our picnic, I don't fancy staying in these warm nights and who doesn't love a bit of alfresco dining, plus I know you are just going to love it!

I decided to knock up a quick Spring Tart nice and easy to make and cut up into little squares and pop into our hamper. 

Ingredients needed are:

3 sprigs of Thyme
1 lemon
250grams of Asparagus
Cream Cheese 
Puff Pastry
Frozen Petit Pois

Start by pulling apart your thyme and place in to the bowl of cream cheese, squeeze half a lemon in and give it a good old stir and spread over your puff pastry.

Wash your Asparagus and apply on top of the cream cheese mixture and by that time of placing your petit pois would have defrosted slightly. Sprinkle your peas on top and pop in to the oven at 180 degrees for 20 minutes.

Leave to cool for 10 minutes or so and place your mint on top, cut into squares to be packed away or eaten straight away.

And you are done! Easy Peasy, Minty Puff Pastry!
