I love nothing more than stocking up on some fresh vegetables on a weekly basis.
I do love to change it up each week, but we have some staples. such as avocados, basil and courgettes which I use in a multiples ways and basil is a key ingredients for my famous homemade pesto which I make on a weekly basis.
I find that I feel so much better since we started to eat a lot more vegetables, we have changed our eating style in my home, we do not eat as much meat as we used to which is great, plus its get's me making and eating new dishes that I would not of eaten before.
Courgettes, my all time favouite, be it with pasta or using it as a pasta or my guilty pleaseure, making them in to fritters I find that courgettes are super versatile in dishes whilst most people think they are only best for summertime dishes I personally feel they are great all year round.
I eat an Avocado at least 5 times a week, particuarlly for breakfast, well certainly on a Sunday when I havee bacon sarnie just to feel better abot eating a tonne of bacon! Another guilty pleasure by means of eating Avocados is, I know a little controversial but it is great in a chocholate mousse.
Romaine lettuce, I love a goodsalad, as a side dish or as a maine for lucnch, thete are so manny different varaitites but I found wouuld that both Leanora and I love in the form of the Romaine, it's got a great bite and holds it wesight if appkying a dressing.
Caulliflower, I mean a champion in veg. I love to roast it with a some cumin and a splash of olvie oil, grated and used a rice, if I want something lighter and less carby or in the colder months as a soup, it is truly one of our vegetables.
Mushrooms, now most people are not fans, me I can happilly eat mushrooms all day, be it a chestnnut, shitakie or my favourite enoki in a lovely brothy ramen, but always on a pizza, sneaked in to my bolognese meticulously hidden from Leanora, or on a Friday night curled up on a sofa, served on top of a cream bed of polenta.

Granola Breakfast Tarts are the way forward in life, especially to fuel yourself for the day. Keeping in tune and continuing to eat healthy and kicking my day off the right way, this weeks brekkie has been a combo of fruit and yoghurt with my homemade Granola that we can't stop eating.
I have been super stocked about the fact that Leanora has been loving the granola and I can't make it quick enough, as she has been wolfing it down, so I decided to use my noggin...For once! Create these epic tarts.
Last weekend, after we purchased the weekly shop in the morning I felt for something fresh, so I decided to eat some of Leanora's yoghurt. I am not normally a yoghurt person, anything to soft and no texture freaks me out, but it is a delicious pairing with the granola and fresh fruit, great way to get your 5 a day in.
Most weekends we always make a cake, it's a great way for Leanora and I to bond and spend quality time together making something together. honestly weekends are my favourite time, not only because I am not at work, but I get to spend all my time with my best buddy, well until she drives me insane and I pack her off to Nannies house.
Cooking with kids, is a great way to introduce them to new foods, they are more inclined to eat it when you are creating something together and what better way to start than with this tasty granola breakfast tart.
Ingredients to make 8
2 cups of my easy granola
1 cups vanilla yogurt, coconut yogurt, or almond yogurt
strawberries, raspberries, blueberries for topping
Instructions
Pre-heat oven to 325°F.
Mix the granola, melted coconut oil oil in to a food processor to crumble
Press about 3 tablespoons of the mixture into 8 greased mini tart pans
Bake in the center rack of the oven for about 15, or until golden
Remove your pastry tarts and allow to cool completely in the pan before removing
Fill each tart with a few table spoons
top with your fruit and eat

Sometime you just got to keep it super simple! This granola recipe is tasty, healthy and is best enjoyed with yoghurt and fresh fruit or as a tasty snack on its own no matter the time of day.
Breakfast I have a tendency to be naughty with, in an unhealthy way! But a new year calls for new beginnings. I want to enjoy breakfast or a snack anytime of the day, knowing that I’m eating healthy and putting good fats in to my body and not just mine but my daughters too, it’s easy to stop off to Greggs grab a steak bake loaded with salt and bad fats, which in truth will fill my up for a short period, leave me sluggish and in no way good for me.
So this year I want to start off on the right foot making good healthy choices and what better way to kick it off, is with a healthy breakfast to keep me energised all the way through to lunch.
Another way that I am making healthy choices and starting my day right is with a 30 minute work out or a 10 minute meditation, I honestly can not recommend it enough, I feel great, my head is clear my mind is right and makes me crave even more putting healthy food into my body.
This super simple granola I make on a Sunday to see me through the week, you can store it in an air tight container such as Kilner jar or a Tupperware box and it keeps it fresh for the whole week.
Ingredients
4 cups of oats
1 ½ cup raw nuts and seeds (I used pecans, sunflower seeds and chopped almonds)
1 teaspoon ground cinnamon
½ cup melted coconut oil
½ cup maple syrup or honey
1 teaspoon vanilla extract
A pinch of sea salt
Directions
- Pre heat oven to 200 degrees and line a baking tray with parchment paper
- In a large mixing bowl pour in your oats, nuts, seeds, cinnamon and salt and combine
- Melt your coconut oil and pour over your granola mix along with your maple syrup and vanilla extract, mix well
- Pour your granola mix onto your lined parchment paper spread out and then place in the oven and bake for 20-30 minutes
- Take out and leave to cool for up to 45 minutes, then eat if you like and store the rest in your airtight container and enjoy throughout the week

Aliesha tucked into the fragrant warm spiced, Turmeric cauliflower, feta, pomegranate, mixed seeds & nuts, kale & root vegetables before I even had a chance to look up and taste she had wolfed the lot down.
Sushi grade tuna & salmon, mango, sesame seaweed, pickled cabbage, coriander, chilli, lime, cucumber, spinach, courgette & carrots, poke bowl which we doused in the best soy and hot sauce not that it needed it, naked works perfectly fine too.
They also have an array of fresh juices to wash down the salads all made fresh daily, my favourite has to be Rise n Shine, consisting of Apple, Mint, Lemon truly refreshing and delicious.
We waddled back to the office like little piggies, stuffed nicely with our healthy lunch and thinking about what we are going to have for our healthy lunch tomorrow.
Honestly, I love this place, I can not sing its praises enough and I am so glad that husband and wife Mark and Lindsey brought back their healthy eating and food adventure back from Oz in 2004 and set up Abokado.
Trust me this is just veganning of your love of Abokado.

London Mumma
One of the biggest hurdles we face whilst relaxing by the beach is finding good healthy food on holiday.
Holidays are meant to be enjoyed, celebrated and lived up and I know that some fret about the new cuisine on offer, allergies, diets etc and most importantly eating healthy and me fitting into my new Warehouse maxi dress.
Eating healthily whilst on holiday can be easily achieved and perfected to help maintain that perfect beach bod that you have been craving and working for no matter where you are or what tropical island you have whisked off too.
Holiday booked thanks to Destination2 I've had to think how I and Leanora will, ok, ok mainly me will maintain a healthy diet, and in doing so it will all have to start at the beginning.......
Airport
I have to be organised at all times, especially now that I am a mother, but you can not help being stuck in traffic causing you delays and when arriving stopping at the first fast food restaurant you land at in the airport, but if you do, why not grab a yoghurt and a few nuts to keep you going rather than a fatty fast food snack, that will only end up bloating you.
Aeroplane food
Some airlines you can order before you board, giving you a better view of what is on offer on the flight, therefore being prepped and food ordered which will have you backing away from the trolly dollies.
Mini Bar
Step away from the mini bar, they are always loaded with snacks, most not healthy and a lot of calories and sugar inside. Rather get up venture out and check out the local shops to see what is on offer, great food, plus a walking work out too.
Breakfast
I used to be a skipper, but that is not healthy and only leaves me crashing and snacking on crap throughout the day. Instead, load up on breakfast, your fruit, veg fill up on your 5 a day to keep you fuelled right up to lunch.
Dining
Eat what the locals eat, be it fresh fish to grilled meats, after all, you do not want to miss out, but it will be fresher and lighter, then come dinner eat something lighter and greener, your gut will thank you for eating healthier and you won't go to bed with a heavy stomach, plus eating more for lunch will be a saving for you for later and allow you to survive the day longer.
